Sardines are sourced from Matosinhos, hand-cleaned and hand-packed as single-piece fillets. The standard is strict: one unbroken loin per piece, no offcuts. Available at A Vida Portuguesa in Portugal and through Portugalia Marketplace and Amazon in the US.
